Type one diabetes is a serious disease, and if he is not taking it seriously, I would say to dump him, as he would not make a good father.
Think of it this way, it is critical to change the oil on your car every 4,000 – 5,000 miles – it is called preventative maintenance. If you ignore it for years, the engine will need replacement every 40,000 miles or so, perhaps a shorter length if the engine runs out of oil.
Diabetes is much more critical than car maintenance, and if he is not taking it seriously, then he will not make a good father for any children, as they will not have him around in 30 years.
I suggest that you read these two books. And then try to get him to take some of the diet suggestions in the books. Strict adherence to this diet is not a requirement, yet following the diet more than 75% of the time will see the need for less medications, and then he will start to feel better, and probably have much more energy too.
It would be really boring to follow the diet each day, and never take a treat every once in a while.

Dr. Young writes that eating a more acidic diet can cause problems with a diabetic, and might even be a root cause to why so many have diabetes these days. Soft drinks are very acidic, and should stop drinking them – even diet ones that have artificial sweeteners that make it even worse.
Dr. Barnard writes that he used to recommend his diet plan, and the people resisted, until he had documented results of trials with patients that showed they could reduce medication in some cases by 50%, lose weight, and see their cholesterol improve as well.
The last time I drank a soft drink, I got muscle cramps within about 30 minutes. I don’t think I will ever have another soft drink. I used to get the 44 ounce soft drinks, eat at Taco Bell, and refill the cup before leaving, so I could drink another quart on the way home.
Now I only drink 9.5 PH water. It keeps you from getting muscle cramps, and it assists in raising the PH of the body, and that seems to make the insulin work more effectively in a diabetic.
I also suggest that you both give up using artificial sweeteners as much as practical. I would not search a product label to make sure it has no artificial sweeteners, but would not buy diet products that includes some sort of artificial sweeteners.
Also try to avoid eating to much cheese. This has a high concentration of animal fats. While a small amount in a bit of food is OK, I would not recommend eating chunks of cheese, and would skip a cheese sandwich, as it contains a little to much animal fats.
I know – Nachos is one of my favorite foods – but I want to eat healthier now too. A taco with some cheese is still OK to me, but not more than a certain amount each day.
You might want to watch this video of a diabetic patient that did not control his diet to well, and this can lead to poor circulation to the toes, and to the gangrene that this guy had. Note that he reduced his diabetes medication in one month from 16 units to only 10 because he was eating better and drinking alkaline water.

if you have type 1 you should say good bye to unhealthy foods permanently. even if you are eating low fat/ low sugar, its still going to harm you.
i know someone with type 1 who even cut back on fruit because it is too high in sugar

Since diet soda doesn’t contain sugar, it wont do any harm normally, however, its not the fat level of the chocolate that matters, its the carbohydrate level, if its high, it might worsen the condition, but if its very low, it does not do much harm either.

Too much of anything is never a good thing regardless of how much better it is then more sugar filled, fatty varieities of the same food.

The best thing to do would be take your medicine correctly and eat a healthy, balanced diet. Try to drink diet soda and eat pastries sweetened with aspartame. I know that this might be hard, especially for a younger person, but you gotta do what you gotta do.
